 Volaki Cheese of Andros. A trademark of Andros and Tinos, volaki or kefalaki is a cheese with a long tradition. It takes its name from its shape: it is molded into a round shape like a pear. It is made from cow's milk. When it is fresh, it is used like feta in the rest of Greece, while, when dried and matured, it is melichloro, and its taste is reminiscent of spicy kefalotyri.
