The manoura of Sifnos, which has already matured, is placed in wine lees (gylo) and then in a vat for further maturation. In the vat, the aromas of the wine lees penetrate the mass of the cheese, thus creating a wine cheese, with a tangy and spicy taste, a distinctive aroma and a characteristic black rind that is edible.
